When you experiment on an item, you have a pool of experimentation points to spend. The better your crafting skills, the more points you have to spend.

You can opt to spend all of those points at once and click experiment or you can opt to spend some smaller amount each time you experiment. My experimenting one point at a time, we're talking about the practice of spending just one experimentation point to enhance the item, then clicking Run Experiment. Then, you do it again and again until all of your experimentation points are used up.
