For the dance xp, go up knowledge first. Higher dances always mean more xp.

For healing, it depends how you are doing it. If you are just performing regularly,it doesn't matter which you go up first, you still get the same xp. There is a limited supply of wounds to heal, and the xp for healing is constant.

If, on the other hand, you are grinding with the help of a CM or a pair of CM, you'll probably want to go up the healing branches at the same time, or more likely wound healing ahead of fatigue healing. Since they have an unlimited supply of wounds to heal (A pair of CMs healing each other's mind damage is best for this) you want to heal it as fast as possible. While fatigue gives more xp, if they run out of mind pool they won't be able to produce more BF. If you do this, invite other entertainers along. You all share the xp, and you can heal them even faster for even more xp.
