Ok, I have been out of SWG for a while and decided to give it another shot....starting out as a Dancer. So far I have yet to find a Cantina that other players actually stop in to watch. In fact most locations seem rather dead.
What is the best (busiest) cantina to dance in and...which server should I play on...are any beter than others.?

The best cantina's to dance at probably change from server to server. On starsider I like Eisley the best because it gets alot of roleplayers hanging out there at all times of the day.

Eisely is crammed on Intrepid, althought it seems to mostly be with AFK botts at the momet 
In some ways it was much nicer there when it was being a backwater with only a few people going in and out.

Depends on your server and even that can change. It used to be C-net for our server but there's been a large group of Germans taking over the Theed cantina. They've been excellent at booting AFK dancers from the grouping, which ROCKS. They've also been doing a lot of RP and I ended up giving away 2 droids, a ton of clothing and tipping a bunch of them, as the newbies only start out with 1k creds now.
Positive reinforcement is a good thing.

I'm still looking for a good cantina on Eclipse. Mos Eisly is busy, but only with bots...most days there is only one other live entertainer there, and sometimes I'm it. Eh, but the tips are pretty good since there are so few of us live.

If you find you like a particular cantina and you're surrounded by zombies...take ownership. Do your thing and steal the customers' attention from them. Word will get out. The live entertainers will find you. Don't forget to check on your server for an entertainer chat channel. These are most often named ent or atk.

I can't agree more. I actually have people /tell me when I'm around town, who will pay me to come to the cantina to heal/buff them because they *don't* want to pay a bot.

Yep, that's what I'm in the process of doing It's a shame though, I remember the first months of the game when everyone was alive and unzombified...now there are so few live entertainers out there....

Yep, Theed is alive and kicking still and it's full of atk ents (and unfortunately afk ones), and lots of patrons throughout the evening (GMT)
I'm there 7 days a week 100% atk and /registerwithloc so people know it's alive
