Uh... Not to totally derail the thread but... Okay first to answer the question:
Yes, the cantina stays as long as it has maintaince. Just don't plan on moving.
Now about multiple cantinas:
Just place 'em. If you want a city full of cantinas, Just place cantinas. As far as I know there is no cap. There are several cities on Kettemoor with more than 1 cantina. Including my hometown of Temenos. heck we had 3 at one point.

I've seen cities on Starsider with three cantinas. My city has two, mostly because Bluesbakka quit a long time ago, but someone or other still has admin to his cantina. And most Imperial guilds on the server are banned. So the Queen of Cups is the Imperials' cantina, and House of Blues is the Rebels'. Although I don'tthink anyone plays regularly in the House of Blues. But both are on the planetary map.
