He is level 65 when grown up.

I also noticed a train as mount comes up. If I select this option will he drop in level? He retains as a level 65 mount I assume?

The CL65 Veractyl will retain it's CL when trained as a mount. It will not drop to CL10.

Yes the quest varactyl. Lvl 65, will keep that level. I got mine the day after ROTW came out and it grew to full level in about 4 days. Quite handy having a Lvl 65 mount that can help in a fight.
