I don't understand the first question
BE pets can do MUCH more damage(they attack twice as fast) and can have MUCH more health than wild pets but apparently can have less abilities.
I'll always depend on BE pets for my main pets.
Each time you 'roll over' the pet XP you get training points. You also open training slots in this manner.

1) Size has nothing to do with CL (well, I think the CL of BE creatures may adjust the size, but I don't think that's what you're asking), and the CL of a creature never changes. If it's CL 70 when you tame it, it'll always be CL 70. If it's CL 50 when you tame it, it'll always be CL 50.
You can search the creature database at www.swgcreatures.com to get a list of creatures for various CLs. Use the advanced search and select "Babies: Yes" to filter it down to the ones that are tamable.
2) Dunno. Wild pets have a chance of having an inherent ability, which saves you a slot (or two or three if it's an L2 or L3). I've heard that BE pets tend to attack faster, but I haven't played much with them.
3) It rolls over back to 0/27000 (plus whatever extra from the last xp gain). This is a "maturity level". It takes a few maturity levels to get to full size. At each level, your pet gets a certain number of training points (which seems tied to the CL of the pet), and has a chance of gaining an ability slot. When you have an open ability slot and enough training points, you can teach your pet an ability (provided you already know it).
