If your Stored Pets modifier drops below the number of pets you have, you will still be able to call your pets (assuming you still have enough Taming and Taming Vicious skill to call it).However you won't be able to acquireany new pets(either through taming or training) until you've gotten rid of enough pets to get under your new limit.
If you're ever planning to work your way back up through the CH profession in the future, most folks would advise you to keep at least one good non-CH pet to regain XP.
Really, I always thought you could call your pet as long as your max level of pets is higher than their CL
