If you are considering a level 10 pet for PVP, I do not believe it would be effective. They are just too easily defeated. But for PVE they work well because they do not draw a lot of aggro and therefore are often ignored.
Alevel 10 pet can be quite effective at crowd control. I find hamstring and knockdown to be pretty consistent even with just the first level version. Noone has found the root ability yet and we have no confirmation that it exists. There is a sticky on pet specials, that I would recommend reading, that explains what is available in the new system.
As far as what type of animal, you have several options. If you fight in groups often, you may choose to use a smaller animal that way the other players will not even see them and lag will be less. If not, you may prefer a mount, so it has one more purpose.
When you have your pet, you can use the /tellpet command, that way your commands do not show up in spatial.
Also what level abilities can I get on a CL10 pet, and how many?
and in that sticky it says what pets you get certain abilities off, does that mean only that pet can have those abilities? Or does aCH learn from the pet or something and can train other pets?
I have only trained CL10 pets up to having 4 abilities and I *think* this is the cap. I have one toon that is MCH/MBH and can say that imperiling feint (lowers defenses) and hamstring (snare) work *very* well. Some people like to have intimidate, however I find this very hard to stick. I don't use a KD on my pet since I can do it myself. Lastly I put either eye gouge (blind) and / or staggering attack (stun) on because then I don't have to waste action on these debuffs when the pet version sticks better than mine.
Personally, when using my CL10 mount, I use one that has the innate ability intimidate and the trained abilities imperiling feint, eye gouge, staggering attack, and precision strike (increases pet accuracy). You could probably replace precision strike with hamstring and get a decent snare.

BTW I am referring to only the level 1 versions of the abilities, they will work sufficiently for BH work.

the carion has also the best health on a CL10 mount (1950). another nice special attacker mount is a CuPa as it can use the specials as range attacks.
