It wont stop growing, whenever you get the mount option you can do it and the mount will countiue its growth.

I mounted mine as soon as I could and it still grew to lv65 just fine. I think it's only the Giant Carrion Spat that you have to stunt because it grows too big to mount otherwise.

Brackaset is 65 as well... the Giant spat is the only stuntable mount I am aware of.

I couldn't mount mine until level 40 or 45 recently. He's still growing just fine. He's a little agressive and sometimes has to be told twice to come back on a pull but he's doing alright.

I just really like the noise it makes - hated it to start with but now hearing it travelling across the misty early morning hills of Talus, everyone knows when I am home!
