I am not a CH but I'm considering it because of the CU. I was thinking that the CU is gonna make CH a big profession again..... Also with their DOTs I think it would it be awsome would it not? I do PvP and I was really considering it since there will be no defense stacking after CU, any advice as to why I should go CH because I'm afraid to drop my profs that I have.

I think most CH's will agree that there are many more reasons for being a CH than 'owning' in PVP. Its a profession that requires discipline and patience but is ultimitely extremely rewarding. Its true we are nerfed to heck at the moment but there is still a great deal to the prof as it currently stands. No-one really knows how the CU will affect CH, although I think we can assume it will improve but how is difficult to know.
I'd suggest that the CU won't help you be exceptional in PvP after the CU and you should know that the CH grind to master is certainly one of the hardest.
In short if you have a feeling that you will enjoy the adventures and travels you have with your pets and looking for and taming pets then by all means do CH. If you are after intense PvP skills and DOTs I get the feeling the CU will encourage more mixed templates with partial profs such as Combat Medic/Melee and Ranged.
Hope that helps
