Well I can without worry say I have quite an extensive knowledge on this. As far as I have been able to test out and determine it goes something like this......Keep in mind though that these differences are very minor. Only in gallop do you truly notice difference.
Kaadu/Carrion Spat - I personally have outrun a new noob speeder on a kaadu, not by much but enough
Dewback/Bol/Bantha- dewbacks, Bols and Banthaare fast but not quite as fast as a kaadu or spat, they turn slowly though
Falumpaset/Brackaset - these are the most lumbering mounts. They are cool though because you sit so high up....also you can add Giant Carrion Spats to these guys
I have not tested the difference between non-ch mounts and some of their larger CH variants. The ones I have tried I have noticed the same lack of real difference.
Basically speed is not much of a factor, it is more a matter of taste.

I agree, because I either ride my wastleand cu pa or my savage humbaba all over the place.... I think the last time I even pulled out my swoop was to race to a WP somepone emailed me in game to coem tame a gurreck on endor, and I was in a hurry to get there before the baby went poof.

The Devs are saying the new Varactyl is the fastest mount in the game when the Expansion goes out.

Personal Experiance: Not sure though
Class A: Avian
Kaadu: Best all around, fast in water, fast on land
Carrion Spat: Same on land, a bit slower in the water.
Class B: Misc place to put Cu Pa
Cu Pa: Close to speed of kaadu and carrion spat, has more terrain nego but less speed
Class C: Slow turning Radius
Bantha: Seem qauite slow, could be an optical illusion though
Dewback: Faster than a bantha, pretty much on par with a cu pa
Bol: Mini Dewback with horns!
Class D: Things a bothan would look a bit too small riding
Brackaset: slightly faster than a bantha, slightly slower than a cu pa
Falumpaset: Its a brackaset without armor
