Tap the follow macro once after I pull away, and he trails right there behind me. Not sure what the fuss is about.

Likewise, I don't have any problems with any of my pets, mounted or otherwise following my commands.

I have mounts that work fine and one that got lobotomized when he became a mount. There's no method--all are trained with the same commands. One is a mountain dewback trained as mount a few days after the mounts came in. The other is a cupa tamed the month of release but mounted recently (obviously!). The cupa won't follow instructions. I had a dune bantha for a few days and it seemed to work ok, but a little sluggish to respond.
Are there certain species that work and some that don't? My brakaset (don't recall what type...lvl 30), mtn dewback, and dune bantha work. My cu pa doesn't.

The fuss is you should never have to ask the mount to follow you, unless you've previously told it to stay, or you've used one of the posture change emotes (like /pet) and it's laid down, which is default a stay.
The mount should follow you automatically, like every other critter pet does.
