As far as I am aware the Pet Trade In system will not work for a CH. So you cannot de-level trophies.
Next you can keep all your pets in datapad. Calling and restoring those nonCH pets will still work.
Lastly, keep a CL12 pet for grinding, in the likelihood you come back someday it will be there.

Hello, my fellow creature handlers,
I recently attained master CH, but due to obsessive crafting needs, I plan to drop the whole profession. I have a few questions for the community. If you were in my position, what preparations would you make before dropping CH? I'd hate to kick myself down the road, saying, "I should have done that while I was a MCH". I've got a trusty kaadu mount trained up, which will probably be my sole pet. Is it possible to de-level a trophy pet so I could call it as a non-CH? I've got a kinad baz nitch that I'd hate to just release.
Thanks,
