The samples are for artisans to make creature habitats...useless really. They look like fireflys when you release them. You cn try to sell but wont get much for them if anything.
Meat is used by professions like doctors to make stims etc. If you examine it and it has a good overall quality you can sell it for decent money if you have enough of it. I believe BEs can use crappy meat for grinding etc.
You dont have to eat but it can buff your stats a little bit.
Hmm, if you have the xxx4 skill, mounting shouldn't be a problem. It will be the very last trainable skill prior to any triggered specials you can teach. Only other problem is if they are BE'd because several people I have spoken to have said that BE'd mounts are not growing large enough to be able to saddle.
Try calling pets and trying again if still doesn't work, try to restart game and call them again. Other than that it may be worth checking with another CH of high enough level to see if they can mount them and last resort is to write a ticket.

Cool, sometimes we just hit weird bugs and things that can mess things up for a while, glad it worked though.
Might be worth trying to tame something else to train and mount as well, just to check.
