What could I blow up?

If I had a hammer I could hammer in the evening

But what about a rocket launcher?

I think the hammer reference was to an old Simon and Garfunkle song...

I think the current answer to the original poster's question is "nothing". However, with the upcoming fixes to heavy weapons, there's hope that you could take out heavily armored targets.

So for now we're better off using the hammer. I hope the rocket launcher will be useful vs an ATST. It would seem to be a perfect fit

Pistol whip actually does work with a droideka, breaks them into a bunch of little dancing pieces before it eventually reassembles itself. Kinda funny looking.
