Except maybe the Twil'lek dancing girl in Anchor Head's tavern.

ummmmm not sure if i understand ya but ill try.
The Jedi is actually the first character. when you get an alt it starts off like a brand new character. you keep the FS skills when you become initiate and padawan, and probably drop some of them for skill points eventually (im not sure about that though)

you will have to keep the 6 branches + the skill points. some of the boxes you choose add to your stats, for example range defense +XX. and yes, it stays with the character. as mentioned, the new character is just that, new.
whichever other skills you have e.g. pistoleer or bounty hunter you will probably give up at least in part to free skill points for your jedi.

there you can play around with theoretical skills and see what stats you get and what skillpoints it costs, etc.
