Zabrak's are the current preferred choice....for now.
But I would argue that 1 of 2 things will change in the not too distant future:
1. Some fix/ameloriation of mind damage being determining factor to combat.
2. Some 'nerf' (that i sure won't be calling for even though i'm human) to the markedadvantage Zabrak's have given the current predicament.
Unless yu're going to be a hard core PvPer under the current rules I'd say keep whatever race makes you happy. Personally I don't think raceon CM is nearly as big of an issue as race is to Imp Faction Point grants in trying to get one of those tin chickens.
Jacore, who erroneously thought the +10 Artisan experimenation of our class would translate to med use (but is happy anyway).

Any of the races are going to be a good CM, however, some will have the destinct advantage of maximum point migration, which you'll most definately want to do. Humans are most customizible but provide no racial stat bonuses.
I would tell all players though, play the race that means something to you. Cookie-cutter characters are no fun in the long run.
As a Bothan Master Combat Medic I completely agree with Ssabmud. Zabrak's are actually a better choice for medic but since you can't change races just migrate your stats to MAX out mind/focus/willpower and you will be fine.
Additional tips to get the most out of a medic based profession: get your armor sliced for HAM costs, never wear a helmet, and although it's a bit buggy try the blue stat enhancing food and drink.
