...without having all the +experimentation/assembly skill enhancements? I'd really like to try this profession out but I don't have millions of credits to dump into the tapes :/
Any advice/opinions?

I did pretty fine with only 10 points.
You need good resources though. With 12 points you can compensate a bit with more skillpoints, but with 10 points you need everything you can get
Brandy once it reaches the 400 buff, 43 min point (should be possible with 10 points) sells. Not for as much as a 12 point chef will sell his, but it sells, you have to be cheaper though
Same goes for Ahrisa.
I wouldn't really bother with 33% Canape though, better raise the buff and leave the filling at 39, but mark it (or people will scream "ripoff" if they're too stupid to read stats)
Bivoli, either +25/2 uses or 23/3 uses sells as well. Best make both versions, price them the same price and let the customer pick which one they like.
Havla is easy as well. Try to reach 100 or 101% (everything below it won't work AT ALL, everything above 100 is wasted too), then try to max the number of heals. It will sell pretty good as well (not as great as back when CMs were gods but docs still love it for buffing)
Then, you should try to get your hands on a Chef Crafters Apron, you can get that one quite cheap, perhaps 100k-300k (but i guess it depends on the server), it gives you +5 Experimentation (and since last patch everyone even wooks and ithorians can wear it).
Then try to find anohter +5 exp. best in +1 or +2 tapes. Those are relatively cheap.
Then you have 11 points and can do better.
Once you got enough money start looking for higher +Exp tapes. You most likely will only have 2 or 3 pieces of clothing free, since the low ones take up a lot already, so you will have to look for tapes +3 or +5 or so, those are expensive

Yes, you can do it without the skill tapes, but to be successful it will require:
1) Very good resources
This varies wildly from what is "important" for the type of food/drink, but assume at least a couple of 900+ without a really bad score. Overall, the most important are PE and OQ with Flavor and then DR.
2) Very good additives
For example, this means using only +87 BSNs. The extra skill points from tapes allow some level of skimping on these, but for a 10-pt chef use the best for the marquee food & drink such as brandy, ahrisa, and canape or else customers will notice the difference.
3)Maintain stock
This is very important to be successful.Start by focusing on only a couple of products, buthave a deep stock ofproduct with atleast average stats for normal (or slightly below) pricing.
4) Location
Choose locations that are close to major travel points. Outside of either Theed or Coronet are good choices, but the real estate is crowded. If you want to work with others, then look into a mall that may be lacking a chef.
5) Advertise
Everyone complains about spamming, but whatever method you decide to use, get the word out that you are there and have plenty of stock.
6) Customer service
Skill points don't help you on this one, but soft skills such as explaining questions about chef products, talking to potential sellers of resources, treating scouts/rangers fairly, and saying an occassional thank you. People remember this more than you can imagine.
That's my quick list -- you could probably search the forum for more detailed threads on the above topics.
Good luck!

Quick point... assembly does not give a better chance to amazing success, since all chef foods initial combine is either a great success... or a crit fail

you can survive in the market as a 10 point chef, actually when i was a 10 point chef some of my stuff was better than 12 pointers.... chef is all the rage right now because people think it is easy and high profit..... just as in the past they will realize that it takes work and effort to make quality food.... if your going to be in the chef bizz for long term you need to aim for 12 points

i am only 11 point chef...and do alright for myself....and my store is only like 500 m from the MASTER VELARA (who is MIA i must say i am rather sad about that...she was my metor and hero...i think the EQ2 gods got her)
Anyhow it can be done.....i would suggest starting out with trying to get the best resrouces for the basic foods first tho....brandy, canape, bivoli/havla dont try to get the uber resources for everything when you start cuz it really just wont work or be worth it and you will just become completely annoyed and give up

Thanks for all the replies!
I'm getting back into crafting because, after a long break, I'm getting back into what got me interestedd in this game to begin with. I decided on chef for a couple reasons:
1. The chef in my PA is almost never on and doesn't stock his vendor on a regular basis.
2. On many occasions I have had to travel the galaxy looking for a particular food or drink because nobody had what I was looking for in stock.
I picked up a chef crafter's apron already...I guess I'll just have to keep my eyes open for the CA's

Some of the stuff I don't really bother making for people, but other things I have good enough resources that I can make good stuff.
Brandy is +405 for 39m 30s, 50 fill, 19 use, doesn't sell really well but I'll sell it for a reasonable price if someone asks for it.
Veghash is +29% for 12m, 16 fill, 5 use. Sells reasonably well and I do have a steady buyer.
Bivoli is +24 for 14m 36s, 23 fill, 3 uses (assumes 2 amazing successes to quantity, otherwise I charge less for 2 use or take from time a little bit by using the third point 3x13m > 2 14.5m).
Other stuff I make sometimes too but so far those have been the big ones. Doing custom orders is also a good way to get and keep business, especially if you make some of the harder to find foods.

Ikooga's advice is spot on.
Grab that 11th point as soon as you can though... it's not ver expensive to grab a handful of +1s. With good resources 11 pt. food is virtually indistinguishable from 12 pt.
