I have some Dantooine Berry Fruit and it comes under the fruit section of my Flora survey.
I have harvested 56k of the stuff thinking i could use it for Fishak, but it will not recognise it as fruit.
Is there a special fruit i should use?

You need fruits, as in "Dantooine Fruits" the resource, not fruit the category. Subtle but annoying difference.

But now that you have mined it all. If its of a decent OQ sell it to the doctors who need Dantoine Berry Fruit for advanced meds. They will love you and you will make money.

ive had this problem though. Shouldnt all things listed as "Fruit" work as fruit in a recipe? The recipes dont call for specifics.

I had the same thing happen to me the first time.
If you look closely there is actually a fruits subcategory of Fruit. It's very strange the first time for sure. Berries are needed for other stuff though, so you'll still be able to use them. Just not in Fishak.

I think I almost lost my sanity trying to explain to my resource supplier that I needed Fruit Fruits, not just regular fruits. (I also think he questioned my heterosexuality)

Fruit does not equal fruit"s" in this game. Last time I checked, 2 grapes still equaled fruit in my refrigerator. Crazy devs.
