From my stand point as a chef on eclipse,
1.) Metal Stats don't matter (If Kegs worked) SO ignore this one for now.
2.) Crystalline Gemstones, Stats don't matter. (When Kegs Work I won't need this one) 150K per Cask Run
3.) Berries -- High on all stats. I usually won't consider anything that does not have an average of 800+ between the four numbers. 20K Per Run
4.) Friuts -- Same stats as above. 20K Per Run
5.) Cereals == Wheat, Corn, Rice... Same stats as above 20K Per Run
The Gemstone is my highest priority. It takes so much of it to do a run of drinks, that with a good week I could easily go through 1million units of it. The other items need to be ultra high quality so I harvest only the best and then store them till a great stats item pops.
Just my 2cents

/grumble /grumble I was *not* on the "submit post" button...
Well, it's kind of hard to tell. We're not sure what's going to be a big seller and what's going to fall flat. It'd be kind of silly to buy 100k of lubricating oil, and then find out that no one wants to buy Vercupti. Plus there's the fact that a few of the recipes were changed slightly, so the old familiar Ithorian Mist is messing with us by not needing corn anymore.
If you want to check out the full listing of resources (and over to the right are the stat percentages for the experimentation categories) allow me to pimp out my site yet again:

Off the top of my head, here's what I think is going to be in big demand:
1) Crystalline Gemstone. Used in both glasses and casks (ok, technically the glasses only need "gems"), which are required in all drinks. A 1000 factory run of large glasses needs 100k gems, casks need 150k.
2) Vegetables (tubers for flameout, greens and fungi for Thakitillo, generic veggies for synthsteak and soypro)
3) Berries. High quality ones (with fruits) for Vasarian Brandy and Vagnerian Canape, grind-quality ones for people practicing on Kiwik Swirl.
4) Wheat. Haven't pinned down exactly why, but I'm going through a lot of this with the new recipes.
5) Milk: Most of the higher-level desserts require 2 bantha butter, which needs 20 milk each. They removed the Wild/Domesticated distinction, so any type would work. Blue milk requires 10, that might start to be a big seller if we can get it out there.
6) Meat: Herbivore, Reptilian, and carnivore are required for various chef recipes. Wild and Domesticated are required for most of the BE tissues.
