I only use nutrition additives unless requested otherwise by a customer, and most of my additives I get for 5k a crate, but I am in a different situation. More typically chefs will pay anywhere between 20 to 60k a crate for additives, light additives being cheaper than heavy additives.

As always she either offers to give them free, or tells me that she will give them and I can "pay what I think they are worth... as she doesnt know the cost"....
