Is there any difference in the stats of milk from creature to creature or planet to planet or does milk not have stats? Also, to milk a creature do you need to kill it or is it done while alive? I would assume alive but I have no scout skills yet to test, thanks.

You can't milk the dead, no. From what I've seen, all meat is either wild or domestic, and planet-specific. So Tatooine Wild Milk is not the same as Lokian Domesticated Milk.

I'm pretty sure it doesn't matter. Either should work, though I haven't tested this myself. Only thing I've ever used is wild.

Each category (Wild or Domestic) and each planet type will have different stats, just like Tatooinian domesticated wheat is different from Tatooinian Wild Wheat, which are both different from Nabooian wild/domesticated wheat.
Milkable creatures will give one or the other category for the planet that they're on. AFAIK, if you get Wild Milk from one type creature, and Wild Milk from another type of creature the milk stacks will have identical stats. Well, unless it's at that point of the resource shift where two types of Wild Milk are available, in which case you might get different stacks, but you're just as likely to get the two types from the same creature.
To milk, you have to have "Mask Scent" (learned in Exploration II of scout), and use the "Gather Milk" radial menu option (only appears on milkable creature types) while it's still alive. Hunting or Ranger skills don't seem to affect the stack size, although bigger creatures seem to give larger stacks.
Wild Milk definitely shows up on more types of creatures, so it's a good thing chef recipes can take either. At one point during the revamp's time on TC most foods required Domesticate Milk, including Bantha butter which is a component in quite a few desserts.
