I am a Master Chef/Rifleman, though I would like to open up the extra character slot, gaining the crafting Force sense branches and opening up the ability to start a BE in the second slot to help my chef. Question is, if i go all the way through the jedi trials to open up the slot, am i forced to give up my Chef/Rifle skills when I become a padawan?? Inquiring minds wish to know.

Probably more suited to the "Force Sensitive" or "Jedi" forums, but I can take a swing at it. 
Unlocking Jedi in the current system is done with your current character. So while you get an additional slot, the character created in that slot starts out as a normal, no-skill character. In the old system (pre-pub 9) your new slot was your Jedi.
After getting Padawan, you won't have to immediately give up Chef/Rifleman. But Jedi skills take skill points just like other professions, so to gain Jedi skills will mean giving up other skills. Once you devote all your skill points to Jedi & Force Sensitive boxes, you qualify for the Jedi Knight trials, and can enter the Force Ranking system.
If I remember correctly, after gaining Padawan (and unlocking your second slot) "locks in" those skills, you can't drop them. This is a topic with a lot of discussion among Jedi, I believe the Dev posiiton is that those skill points (and the possibility of gaining BH visibility if you use Jedi skills) is your "cost" of the second slot. You might be able to drop Padawan if you delete the character in the second slot, but that may have just been a suggested compromise that's not implemented.
