As a master swordsman my special costs are very very high. I used to be able to eat two ryshcate and two tatooine sunburn to minimize special costs and after about 10 minutes I can do it again. Now I am able to take one breath of heaven to reduce special costs and that is it, that reduces my special costs by practically nothing. These new foods are the worst thing to happen to this game since, well, since it came out to early. Not only do they really stink but all the chefs are gonna be either dropping the profession or quitting the game and food will be impossible to get a hold of period. Hunting will now be pointless without buffs because the special costs would be suicide. I was looking forward to the launch of the new foods. Apparently they made some serious changes to the update though.

Well, the good news is that BoH is still there, with 350-600 bonus to all usage stats. The duration did drop, though, to 6-10m. If you lean heavily towards draining a particular pool (isn't swordsman heavy on Mind usage?) you can get one or two of the dessert trio (Won-won str/con, Vagnerian Canape focus/will, Kiwik Swirl quick/stam, all +225-375 for 9-18m). You may also be able to squeeze in another drink: Vassarian Brandy for Mind/Focus/Will, Accaragm for Action/Quick/Stam, or Garrmorl for Health/Str/Con, allgiving a +125-300 buff for 30-60m. For fine-tuning, there are three entrees each giving +150-250 to one usage stat: Ahrisa +Focus, Gruuvan Shaal +strength, Scrimpi +quickness. With some tweaking by the chef, you can drink one BoH and eat any two or three of the entrees or desserts.
Personally, I like the layout of the new stat buffs, it's a lot more organized. Instead of having random +this, -that with no real way to get "just like Correlian Ice Cream, but for Strength instead of focus", there's three "vertical" drinks (all three stats for one category), three usage/regen desserts, three usage entrees, 6 Artisan foods for the individual Pool/Regen stats, and BoH to hit all three usage stats. All we need now is a high-level food for all three pool stats and one for regen stats and I'd consider the stat buffs covered.
If you want to browse through the new available foods, check out Vandessa's awesome layout here:

Actually Swordsman varies across weapons, my Power Hammer though has about 110 health cost.

The "legacy" foods are going to be a problem. They fill the stomach far more than they used to.
It's going to take some time to educate both the chefs and the customers on the new stuff...but speaking as a mostly novice Chef who can now make useful things, I'd have to completely disagree with your gloom and doom.

You're using old food which doesn't have the same duration as the new food, so its duration is shorter but still fills your stomach, which now takes longer to empty giving the effect that older food really crap, and it is.
Time to buy some new food and drink I think

actually, guildies are still using my pre-patch Ryshcate...they can still pop two and they are digesting quickly. Also, drinking two brandy's and eating two Ryshcates is giving people some incredible results...if you have pre-patch Ryshcate, I'd hold on to it =p
