I have the money, time and patience. Is it worth the time and effort though?
I see crates of brandy going for 80-100k a crate.
Is it worth it?

What do you want out of it? Money? fame? or just to provide a service.
Cos if you either of those 3 its hard to do it, but you can get it from chef.

If you are going chef all because of the money, I would suggest you go doctor instead. But chef is a very fun profession,even more than armosmith and weaponsmith. There is money to be made but unless you set up your reputation, it's not going to be gigantic.

I want to have fun too, i was master weaponsmith and it is boring as hell.

I have an alt that is a Chef, I did chef because my PA didn't have one and wasn't in to paying the at the time over charged prices for chef goods. My advice is to buy good resources for Ahrisa, Canape, Brandy, Vercupti (sp). Those are my best sellers. I also sell a lot of Veghash, pryollian cake, symthsteak, and a few others I can't think of now. Get atleast good resources for the first list and you should be able to make money to gain a client base to buy/collect resources for other stuff. For me not being rich it took me over a month after tthe 3 day grind to chef. After i got the resources I need then my client base got a lot bigger. If you want to get rich fast I would look int puttin g a vendor into a high impact spot...other than that just make sure to sell lower than other chef's around you and you should be okay
