Why is this option not in the game? The main reason I see for not using edibles is that you have to eat/drink them manually.

I think there is no auto, because an auto feature may not distinguish between foods, and say you want to boost mind not health. Plus some stacks are so small I'm not sure if auto is necessary.

Here's how I see it working: Add an "Auto-Eat" sub-tab to the "Eat" command on the radial menu for food. Once activated you will eat an item of the food you selected and automaticly eat another whenever the buff time on the previous item runs out. This will continue until you stop it yourself or you run out of that type of food.
