Looking to drop Chef...will my cantina, and everything in it, disappear?

Nope, it stays on your lots.

Even though nothing of that is known yet, but it could be that the Devs change it one day and the cantina will poof.

No it won't and is intended not to go poof. You just need the profession to place the building. If you drop it it will stay there until you pick it up. There is the new house pack up feature and I bet you can pack it up but could place it unless you had the cert for that building. That could be a problem. My advice is to never develop a desire to move the cantina.
