For most, or all Artisan foods u can only use light nutrients. (although I may be wrong on this...Im new to Chef, but I have been a BE for over a year)
For tissues:
Light Nutrient Tissues +54 is acceptable...but u really want to look for +57/58s ideally,
Medium Nutrient Tissues +84 is acceptable...but u really want to look to +87/88s ideally,
Heavy Nutrient Tissues +114 is acceptable...but u really want to look to +117/118s ideally.
For non Nutrient tissues like Filling tissues etc these numbers differ, however the BE Forum has an FAQ by Zadokk which I believe is also linked to in the Chef FAQ...it tells you the theortical Max of all tissues.

yeah, i'd suggest you get micronutrient supplements (then convert them to light additives). really, for those artisan things, the #s are low enough that you can get away with saving some cash by buying lower power additives. try to get around 55s or so. from what i've seen, the extra 2 or 3% power from the additive isn't going to increase the foods by much since the base power is so low
