It's been a while since I played with it, but IIRC, anything over 100% just removes all damage. You (obviously) don't gain life from getting hit, and I don't think the bonus breaks above 100. So it's not like Smuggler's Delight, where >100 buff doesn't do anything.

Quick question that I haven't seen a quick answer for: Will flameout work if it's greater than 100% damage reduction (just set it to 100%), or will it just bug up like mad unless I use medium/light tissues and no experimentation to keep it under 100%? Currently with heavy additives, I can get some to 169% without experimentation and 229% with experimentation and 116 INNs.

I recently made a batch. Don't bother using medium additives because it will give you around 167% damagereduction which is pointless since 100% is thecap.Either use some low quality light additives, or just use some decent resources and drop the additives all together.
FYI, you only get around 6 hits with the stuff and with the large filling requirement most people don't use it.

I made some of this stuff for my Jedi as a defense against uber T21s. I think I used a heavy flavor addie so it could last for more attacks and experimented mostly on filling to get it to around 88%, 50 filling, 6-7 attacks. It really would help if I ever get attacked by a 2k max dmg T21 since saberblock, ranged defense and pikatta have me dodging around 92-93% of ranged attacks anyway. God being a chef is fun.

I actually got a request for this, which is why I'm whipping some up. Otherwise I'd suggest "Synth before battle, pikatta pie as it starts, exo as you go + other food depending on the situation."
