May be a little silly to have to ask... but it seems like it is impossible to make a 1000 unit run of brandy... am I correct? If you need 2 identical alcohol, you would need 2000 for a 1000 unit run and you can't make 2000 identical alcohol, can you?

Yes, 499 is the max size of a brandy run.
Just in case you don't know, btu Casks do not have to be identical, you can mix factory runs there.
