I didn't notice any dodging when eating those and holding a carbine.

Counterattack not working as it should is an issue as old as this game is, at least incresing effectiveness of what we have would be nice.

I'm working on putting together some new sticky threads (the stuff listed in the "forum revamp" post I made last week), and I'll make sure this is in one of them.
The "dodge" foodsare just a base defense bonus. You won't see "so-and-so attacks you but you evade" (the combat message fencers and pistoleers get when they dodge), just more "so-and-so attacks you but misses".
So the only "evasion" skill that foods can buff is block for....swordsman and rifles? I can never remember...

I do not agree. I've eaten the dodge food and my pvp opponent was not missing much (however my basic defence might be not enought even to make the food effective) while I was holding carbine. HOwever more testing is needed on this matter.

It works as a boost to ranged and melee defense. Both the food's text and anecodtal testing suggest that the bonus is a percentage of your current defenses... so a guy with 100+ melee D would notice a marked improvement when using Pikata (as I do), while someone with low defenses wouldn't get much benefit at all.
We've had this thread several times, and the general conversation goes like this: people with low defense templates (pikemen, carbineers, BHs...) claim this food is broken and doesn't do anything, while those with high defenses say it's awesome and they can't understand why anyone could think it was broken. These "high defense" testimonials aren't all from fencers, which pretty much debunks the suggestion that the food provides a bonus to the actual dodge skill. My personal experience is that my Jedi (114 melee D) would be up a creek without Pikata.
