What does the resource stats on the
Berriers
Fruits
Be enhancers
for good to uber brandy to come out ?

and doesnt it variate from server to server?

So to figure out what resource stats you need for a particular buff, you'd have to work backwards. If you wanted +426 brandy and had BSNs with a bonus of 87, that means you'd have to hit 426 / 1.87 = +227.
To hit 227, you have to experiment the nutrition category upto about 87%, which means that you'd want resources with OQ/PE above 870.
Even if you don't plan on experimenting all the way up to the cap (since you probably want to spend at least a few points in duration), better resource stats also give you a higher starting point.
Personally, I look for OQ/PE both above 850. OQ can be a little lower is PE is in the mid 900s.

When I made it to Master Chef, it took all of a week before I had a calculator sitting next to me at the PC all the time. I have even set up an old Pentium II laptop to run an excel sheet tracking all the crap I need to keep track of. LOL. I have become a Chef-uberdork.

so OQ and PE that is higher than 800 is all i need from the resource stand point to get top brandy ?

The crafting system is all math, at the bottom. Resource stats -> start/max experimentation percentages -> start/max item stats. Personally, I think the better we understand the system, the better we can evaluate resource quality, and the better stuff we can make.
And BLD, it depends what you mean by "top brandy". With 800 OQ/PE fruits and berries you can offer +410 brandy (assuming you get at least an 85 additive, which is pretty common). That's a respectable buff, and definitely sellable. But higher stats will obviously get you higher buff/duration.
