Personally, in the stock emails I send out to my 100 or so customers, I put info letting them all know that the chef profession has been revamped and will be published soon. I put a disclaimer that if they are going to stock up, they should know that I will not be refunding anything when the publish hits. It is at their own risk if they buy more than they can use up before the publish hits. Funny thing is, the next day I got an order from one for 50 crates of GGP and 25 of Fishak
. Oh well, at least my factories will be busy up until the revamp. I am cutting back though. I have enough variety of the other items still left that I will probably just run Fishak/GGP/Vercupti until a day or two before the revamp hits live. So realistically, one more run after this one.

I wouldn't close up shop just yet, as there are still plenty of people trying to stock up on Fishak and other things that are going to disappear.
I'm just doing smaller runs of each product so I don't have lots of leftovers. And I'm also throwing every single finished crate on the vendor, instead of reserving some for restocking and orders.
I've also been doing some component runs with crappy ingredients, in preparation for the publish.
