Supposing I want to mass produce these.
I would need to pick up engineering IV so I can expiriment on them better right? I'm assuming chef experimentation means nothing for domestic arts foods.

Correct. Anything from the DomArts line uses "Artisan Experimentation", which means getting Engineering skills (and also a bonus experimentation point for humans).
