I'm new as well, I'm still grinding out chef and have been reading as much as I can find and gathering materials.
The good Brandy is BioEngineer enhanced. You have to get a BE to sell you the Broad Spectrum Nutrients. In my case, I paid 1.4million credits for a 1000 run schematic and the resources required to make them, 86 rated in this case. Without BE components, you won't be making top-tier brandy.
I invested in a fleet of harvesters and am gathering as many materials as I can for my grand-opening...can't offer much more help than that, I'm still very new at this.

Good stuff, requires Good materials.
check swgcraft.com, flora, looking only for decay, flavor, pe,and oq. add those values, if under 2900, dont bother, with both pe and oq over 800.
bivoli takes high qual meat and veggies.. the higher the decay, the lower the filling.
Brandy- experiment on filling first, all points at once, to get that to 49, if you dont get an amazing roll, junk that try and start over, or finish it off without any bespin port, and just make a single to sell. Good brandy stats should be 430+/49fill/21use/43+minutes.
gather some wood with oq over 980, to use in the bio-nutrients, and make certain the flora and meat have insanely high stats. I currently get 88 bsn's.
and take your time, no sense rushing a schematic. My last canape.. 715/33/9m30s had all amazing rolls, without the amazing, the best i got was 696/33/7m30s
Always use Pyrollian cake to assemble, always use bespin port to experiment, and research center citys help a tad, along with excellent (15) crafting tools and suberb (44.5) crafting stations.
hope this helps

Is 49 Fill the same as 50 Fill on foods? Can you drink two 50 Filling brandies for a total of 100?, or it has to be below 100?

some claim 49 allows you to drink 2 immediately when they wear off, some claim to only buy brandy with a fill of 49. I have zero combat exp, so never use the stuff, but since some want only 49's, its all I make.

If you are just starting out chef, get a TON of good Fruits and Berries and some BSN's and INN's from a BE in crates. You will need a lot more but this should get you going.

What are INN's used for? I just bought a 1000 run schem & resources for 86 Rated BSN's, as I plan on making Brandy for the most part, at least at first until I get some capital rolling in.

INNs are Intelligent Nanonutrients, and are used to make Heavy Food Additives. You will need these for things like Canapes, Bivoli, Vercupti, Thakitillo, etc.
But it is good for you to concentrate on one item at first to build capital and a client base, so I think you are on the right track.

Thanks for the words of encouragement. I figure when I learn to make high quality brandy, I will try and expand one item at a time until I'm comfortable with each and have a steady customer base.
Not only will this give me plenty of time to learn the trade, but also gather high quality resources, build up some merchant xp, and of course sell lots of Brandy.

If you can make good brandy you can make good canape also, you just need the INNs, more or less brandy and canape take the same stuff.

One thing I forgot to mention if you don't know this already, when your making the subcomponents use crap garbage resources, they wont' effect the final product.
