Out of curiousity, which factors are most important for eggs?
Decay Resistance, Flavor, Potential Energy, and Overall Quality.
And in relation to this, Endorian eggs are at 910 DR, 118 FL, 942 PE, 939 OQ

It would depend on how you wanted to use them. If you were using them for BE additives it would be OQ/PE/FL, but you would never get enough eggs to make it worthwhile to do a schematic with them.
I have used eggs before for items I make individually, like Blue Milk (because I rarely have enough good milk to make a schematic anyway). For Blue Milk, the heal bonus would be dependent on OQ/DR, so your eggs would work quite well.
Just FYI, eggs fit into a general "meat" slot in recipes.
