I have someone working on filling a vendor in my guild hall with BSN's at the moment but we have the ability to convert them to Med. Add. if needed.
As chefs on this board who buy from Bio vendors would you rather buy them crated as BSN or would you rather have them already converted to Med. Add. in a crate?
thanks

It would be more convenient to have them as additives already. Cutting down on factory time is a plus.

I agree having them processed cuts down on time, but I would like them labeled other than "Medium Food Additive." I sometimes use Flavor additives as well, and now I'm starting to experiment with Filling additives, so I label mine something like:
Med NUTR 87
Hvy FILL 45
Med FLAV 47
With that, I can see at a glance what I'm grabbing as I experiment on foods and load my hoppers. And yes, even though I can make my own additives, sometimes I buy them as well, because of shortage of time or quality meat.
