All meat can be used by chefs but some recipes call for specific types most notably insect meat. The most important stat in cooking is:
Potential Energy is the most important inrecipes as this plays a large role in the power of the product.
Overall Energy is next as it plays a role in almost every stat on the final product
Flavor determines the duration of the product and most chefs are willing to accept a lower stat here if theother stats are high.
Decay Resistance plays alarge role in the filling. Some products require a very high (975+) in orderto make the 50 fill items.
Bio engineer is another professionto look to sell your creature resources as a majority of them go into making the tissues required in cooking. BE's need the Overall to be the highest as it 50% of the final tissue strength followed by PE and Flavor.
Doctors use a lot of herbivore meat and avian meat and I believe the only stats they care aboutare Overall and Potential Energy...been a while since I made anything with my Doctor so I might be wrong.

Slingblade answered your question farily well.
The type of meats I use most often are Carnivore ( Bivoli ), Insect ( Vercupti ), Reptillian ( Karkan Ribenes )
However as he said, us chefs can use most any meat.
