Im too lazy to search...
i dabble in chef every now and then....Now most recipes seem to be based on Overall Quality, Potential Energy and ofcourse Flavor...
How do you determine which qualities are best for items that dont have a flavor or energy such as hide, metal orgas...doing some experiments i determined that the highest OQ doesnt always give the best results...i cant be sure but it nearly seemed that unit toughness was a bigger factor....i thought a radiocative would be great to use when it calls for mineral since it has an energy rating but that had no effect...it just seems weird that the metal used for the container can have such an impact on the actual food a

Yes unit toughness is important. On inorganics I look for
Unit toughness
Decay Resistance
Overall quality
This is from some testing done on another website. Focus on UT for high buff durations, on DR for nutritional value.

Yup he has it right, and foods that don't take inorganics you can count on pretty crummy results.

objects with out listed stats are not zero, instead they do not factor in, or give 1000. While I can not vouch for the decay resist stuff , at the moment the best inorganics to use would be stuff with 1000 Overall quality and no secondary stats.
