OK, I am not a chef, but I there is a running argument on my server as to how these two foods work. Here are the things I have heard, and I KNOW they are contradictory, which is why I am here. Please sort this out for me.
- Pikata will help your dodge, regardless of whether you have any dodge in your template, but Air Cake wont
- Air Cake or Pikata ONLY work if you have Dodge mods already in your template
- Both work regardless of whether you have Dodge
- STUN DAMAGE NULLIFIES AFFECT OF BOTH FOODS?
- Air cake is worthless
Now, with the new stomach I am trying all sorts of new foods. Can someone please tell me which of the above statements is true or false, and please explain how these foods actually work. I have asked more than 50 people and 4 chefs in the last 5 days since the patch and they ALL gave me different answers.
Can anyone here please clarify this once and for all? Does this stuff work without a dodge mod in your template, and does stun nullify it or is not affected by it?

That's the correct answer, I'veverified with the devs. I can't see any way for Stun damage to change the effect, although I suppose the stun state (from a TK's stunning blow attack, for example) might. I'm not entirely sure what effect being stunned has, and whether it changes your defense at all.
I got some numbers from Wengel about Pikatta Pie. He dueled a Master Swordsman (140-150 accuracy) with no defense skills, but was under the effect of 55% Pie. With a data set of roughly 50 attacks, 54-56% missed.
It's very difficult extracting exact answers about the combat calculations from the devs, they believe that having too much info would make min/maxing easier. I'm not sure if I agree with that, but that's the stance we have to deal with.
Here's my personal theory on how things work:
1) You are attacked
2) A random percentage is compared with the % bonus from Air Cake / Pikatta Pie / Fizz pudding. If the random% is < Food bonus, the attack misses.
3) AttackRoll = accuracy + rangeModifier+ postureModifier + randomValue
4) DefenseRoll = ranged/melee defense + randomValue
5) If AttackRoll<= DefenseRoll, it's a miss.
6)If AttackRoll > DefenseRoll, it's a hit, but now the defender's "evasion" skill (block/counterattack/Dodge) have a chance to trigger, if you have the skill and are wielding a weapon related to the skill.
7) A random percentage is compared with the evasion skill (testing seems to indicate +10 gives a 1% chance of firing). If random% < Skill / 10, the skill triggers (evading all damage for dodge, stopping half damage for block, triggering an autoattack for counter).
8) If none of the above occurs, it's a normal hit.
- Air cake is worthless
This might just be an opinion of "bigger numbers for teh win!" players. I think that Air Cake's much lower filling makes it a useful choice if you're combining it with other food effects. If you're not using any other foods so filling is not a factor, Pikatta Pie is a better choice.

Yup, description on the food is misleading/wrong. It doesn't affect the fencer/pistol "Dodge" skill but affects your attackers chance to hit you. In effect, the same thing as far as whether they hit you or not but needlessly confusing. I never used Pie or Cake up until recently because I thought it was a fencer food.
