Try the Find Resources link on swgcraft.com. You can sort any type of resource by any stat to see the highest that was ever reported on your server. Keep in mind, this is only updated by people from your server manually so not everything will be there, but should give you a good idea of what the caps are.

There's a post over on the swgcraft forums where they gathered as much "max value" info as they could. Basically, someone did the same thing suggested above, then collated all the info into one monster list.
