what's the power on these additives that chefs usually want. I've been able to hit 117 on INN's and 87 on BSN's...but is it possible to hit higher and do you guys use higher?

It is possible to hit higher, however with the limited resources on our server, the maximum you are able to hit is 58/88/118, believe me, I've tried lol.
117/87 is a good standpoint, and a standard in which I personally make my food by.

I belive the max power possible on BSN is 90 and 120 on INN... and 87 BSN 117 INN iswhat myBE makes for my chef so yes we do want them.
It is possible to get higher, what you need to look out for if you are aiming for this is the meat as everything else is easier to get with regards to high quality.
I have been making 119 INN and yes have been using them but I would still use the 117 because for some of the food there is only a few points differnt in the end products of the food from using 119 compared to 117, sometimes worth it.. most of the time not so much.
