It probably depends on what you're doing, how much time you have to prepare before hand, and how much power you need. I'm starting to like the new menu's flexibility.
One main thing I've started to look at is the Filling-to-duration ratio. Low-filling, long-duration foods (like the artisan stat buffs, the resistence bonuses) means that you'll get to keep the benefit of the food after it's digested, allowing you to stack more stuff on top of it. These are handy for people who aren't as focused on combat. They aren't as powerful compared one-to-one, but with creative stacking, and mixing-and-matching of skill buffsyou can get some pretty good effects, and you don't need a lot of maintenance. As a chef I like these because the low filling means that the customer needs to purchase a lot. 
High-filling, short-duration foods (like Flameout, Fizz pudding, Vangerian canape with heavy Nutrition experimentation) are for battles that you know are coming (a big PvP raid, a mission to a high-level lair, dungeons, etc). They give you a big effect, but limit you to the number you can have at a time. You're going to have fewer buffs on at a time, which may be ok if all you need is that big dodge bonus to keep the Nightsister or Tuskan Chieftan off your back until they die.
Foods with a filling that lasts about as long as the buff sit someone in between. You can have a buff on constantly, it doesn't have the raw power of the high-filling foods (and for stat buffs, maybe not even a bunch of stacks of low-filling foods), but you're eating less, requiring fewer purchases, and still get a decent bonus that's always with you.
Air Cake (and to a lesser extent Pikkata Pie) is in the first category, although since skill buffs don't stack what this gains you is the ability to have a bunch of other food effects on you at the same time. Fizz pudding is definitely in the second category: a lot of power, but high filling (50-75) and a short duration (a couple of minutes). Using this one means that you have to forgo other foods (or use some from the first category so that they digest before you need the Fizz) and pick the right time to eat it.
With an average synthsteak having a filling of 26 or so, and an average Thakitillo in the 40s, you'd be able to eat both of those and either an Air Cake or Pikkata with no real problem. To use a Fizz, you'd probably have to eat the synthsteak 10 minutes before you really need it, let it digest, then you should be able to take a Thakitillo, and when you really need the dodge bonus eat the Fizz.

Which of these Dodge foods do you all think is best? I want to use one in combination with a snythsteak and thaktillo, but Im not sure how this will work out. I havent had a chance to go in game since the patch to experiment, so what are these looking like on live right now? Any help on this matter would be most appreciated.

Air cake is probably the easiet to mass produce, if that has any bearing on your decision.
edit: noticed you aren't a chef...
Both the pie and pudding require milk to be produced, so they are probably going to be considerably more expensive. At the same time, their bonuses are probably better also. I haven't had a chance to try any out yet or I could be more helpful to ya.
