Some expert chef can tell me what is the Bio aditives used for made a good brandy?

Just remember to turn the BSN into a Medium Food Additive first (Food Crafting Tool), or the brandy won't accept it

Broad Spectrum Nutrients. Or BSN's for short.
Ideally you don't want to them to be any lower than +85.
