I've been a chef for a little while now but I've never been able to figure out what affect food assembly modshave on the final product. As far as I can tell, there's no difference for foods between "great" and "amazing" success on the assembly roll, so do pyollian cake and assembly tapes only give you a better chance to not have a critical failure or a "good" or worse success?

You're right, assembly success has no bearing on the final product.
Tho some say that a amazing assembly making amazing experimentations easier to get, tho i can't confirm that myself.

Nuts, I paid too much for those food assembly attachments hehe 
With my +20 exp suit, a research center, +44 station and 15.00 crafting tool it doesn't usually take more than 10 tries to get an all-amazing schem, so IMO, for chefs at least, a little edge in getting more amazings isn't really necessary.
