Well I just became a new chef and read all of the helpul guides. But stll have a couple questions.
Is the most important stat of all chef resourses PE and OQ?
Is there any other types of stats on resourses that would be better for me to stock up on?
I understand that bones and hide you want OQ DE, are there any others i need to look out for?
I really appreciate all help and sorry for all the newb questions LOL....

I don't think you can really generalize about which stat is the most important. Different foods and drinks depend more on some stats than others. You have to check the schematic of the food you're going to make and decide which stats are the most important to you... personally I hate compromising onany of the stats 
For example with brandy, in my opinion, PE OQ and FL are the most important stats to have high. However, with canape, DR can be more beneficial than FL since it affects the filling and most customers want 33 filling or less. You just have to plan out and play around with differentresources to come up with the best you can 
That being said, I can't really come up with an example on the spur of the moment when OQ and PE aren't important, being that they usually dictate nutritional value.

Parawn nutricake is about the only thing i can thing of where the nutrional value has no effect on the main use of the food. But having just start you don't need to worry about that yet. 
So i'd say PE/OQ is the most important, but you really can't ignore the others, they all play a role. Try not to have a any stat below 400-500, as it may just kill your food.
But that said, if you have a high enough stat on the other foods in may just balance it out.
Like I_Zombi said, just play around with stuff. You'll be able to get a better idea of what we mean.
