The thing I am most scared about is whether or not we will be forced into picking one elite profession or if, like now, we will be able to "mix" a few professions to suit our own unique style of play. I am a Chef/Merchant/Swordsman on one server and a Master Dancer/Master Tailor on another - and that toon has been a dancer/tailor for over two years... I can't even imagine being asked to pick a single profession.
Anybody know how they plan on handling this?

Yes they plan on "handling" it by making you have only one profession - if you want another sorry, buy another account. That's the gist of it but I'm sure Tiggs' answer would be "try it on test center =)".
