Just wondering, and I hope I'm discussing the right food... I was wondering, will this allow a non-fencer or a non-pistoleer to gain the dodge attribute? Or will it only enhance the dodge on the above proffesions... just wondering, thank's =)

It's supposed to add a dodge chance for anybody, although it'd obviously work better stacked on top of a pistoleer/fencer's existing dodge skill. However, testing seems to suggest that the +dodge fromfood is being subjected to the same restriction as the dodge skill itself: you have to be holding a pistol/1-handed weapon to get the benefit. So you may be able to dodge, but only when holding a CDEF pistol or dagger.
This is one of the things listed in the Publish 7 feature list TH has in the "In Development" forum. I suspect the adjustments they're doing to defensive bonuses (giving a hard-cap to them) will allow them to remove the weapon restriction. So a pistoleer/swordsman would have a chance to either dodge or counter an attack, no matter what weapon they're using. This would also allow players who don't have fencer or pistoleer to gain the benefit from Air Cake, Pikatta Pie, and Fizz pudding even if they're, say, a rifleman.
