There is a decent spawn of it on my server, wondering whether to harvest it or not

if its a good spawn harvest it
least you can do is use it in a recipe that uses veggies

Combat medics need it, so you can always harvest it and sell it them.

swgcraft.com has a "resource usage" link where you can select a resource type and see what recipes it's used in. It only selects that exact type, though, so if you pick "fungus" it won't show the recipes that use "vegetables" or "flora", so you'd have to check each category separately.

accarragm requires fungus specifically, it's an entertainer drink that boost action sub stats and what not. It can also be used in any schematic qhich requires generic vegetable, so if it's a good spawn, I advise harvesting it as much as possible.
