Thread: Exo-Protein Wafers small surprise

The restaurant business is a funny thing. There isa balancein offering a menu that your patrons will find appealing enough to order a meal. When it comes to a favorite meal, a chef must reasonably determine if it is popular because it is the only choice on the menu. It is what makes the running a restaurant fun and challenging.
Along those lines, I thought I would try and make some Exo-Protein Wafers. Sure, Synthsteak is a big seller for me, but was curious if it was a big seller since it was my only choice for damage reduction. The Synthsteak is 37% reduction, 29 attacks, with a filling at 25. Not bad.
The Protein Wafers came out at 20%, 19 attacks but just a filling of 5. FIVE! 
So, I often leave the kitchen when someone comes in the kitchen, make sure their meal is satisfying. I began letting the diners know about these Wafers with only a filling of 5. Seems like they are a nice add-on after the ahrisa, canape, veghash, etc. If there is just 5 points left, add it on and reduce your damage 20%.
Lo and behold, this week the wafers are out-selling the steak 3:1 in number of crates sold. While it doesn't come close to Brandy/Ahrisa/Bivoli/Canape in sales volume, it is proving to be a nice addition.
I love these little surprises and continue to enjoy the restaurant business!!
What surprises have you found?? I would love to know if anyone else has had similar experiences with other foods....

oh, I should state that my sales of Steak did not go DOWN, they remain steady. So this tells me that I have found some new sales with the Wafers. It appears these are sales that I was not getting when I didn't have the product on the shelf. This is exactly what we want in the restaurant business, bring in new sales while retaining the old ones.
Of course, it doesn't make me rich But it does mean I am fillin the needs of my diners more completely, and thus I get a little more word-of-mouth, good will, and compliments to the chef! hehe

Wow! I had no idea that they were only a filling of five. I, like most chefs, only offerred Synthsteak in the damage reduction department.

Yeah, that filling of 5 makes it an easy impulse sale. When they are about done making their selection a quick "and would you like to try the Protein Wafers today?" - works more often than not. Adds another $$$ to the total sale.
Kinda like being asked if you want to try the cookies today? at a fast-food restaurant... LOL

thank you for mentioning this! i had some light additives in the oven, started them after i read your post, to try these out.in the meantime, a customer asked me about the wafers specifically. i made my first batch, 24% reduction for 16 attacks, and that lovely itty bitty filling of 5. i emailed that customer that they were ready, they came over within 5 minutes and bought 5 crates! i posted on my trade forum that i had them, got a bunch of responses there, and the wafers are selling so fast that i'm about to do another run of 20 crates, and put more light additives in the oven.
